Recipe from Stella:
Garden Quinoa Salad
(as served at the Earth Day Wellness Fair)
1 Cup Tri-colored Quinoa
2 Cups Water
1 Cup Raw Sunflower Seeds
1/4 Cup Raw Flax Seeds
2 Organic Tomatoes, Diced
2 Large Organic Cucumbers
, Chopped
1/2 Cup Chopped Fresh Cilantro
1 Organic Red Bell Pepper, Diced
1 Organic Green Bell Pepper
, Diced
1/2 Cup Organic Snow Peas
Approx. 1/4 Cup Organic Extra Virgin Olive Oil
Fresh Squeezed Juice from 3
Organic Lemons
Himalayan Sea Salt
Organic Black Pepper
Bring 2 Cups Water to a boil, add 1 Cup Quinoa. Reduce heat and simmer for approx. 20 minutes. Let Quinoa chill before adding veggies. Steam Snow Peas and Bell Peppers until soft. To chilled Quinoa, add steamed and fresh veggies. Mix together. In separate bowl, combine olive oil, lemon juice, salt and pepper to taste.
Add dressing to salad gradually to taste.
